At 65 years young, head chef Uncle Bill has been cooking his signature dishes since he was 16, so it’s fair to say he’s had some time to master his craft. He learnt his skills from the master chefs before him, who learnt from those before them, and so on and so forth. Today, Bill is a highly regarded chef in the Chinese community thanks to his incredible ability to perfectly balance flavours, so everything is just the right level of sweet and sour. The restaurant’s extensive menu includes all your traditional favourites including Cantonese chicken, pork, beef, duck and fish dishes, with a few modern meals like baos thrown in for extra deliciousness. Whilst it’s all mighty tempting, you simply can’t go past Uncle Bill’s signature’s, the duck and barbecue honey pork. Uncle Bill’s Kitchen is located on level one of Australia Fair Shopping Centre and what the restaurant lacks in size it more than makes up for in flavour.
