The Covenant is inspired by owners Mathew and Liz Henry’s travels to Dubai and the south of France, fitting given the venue’s position overlooking Sanctuary Cove’s resident superyachts. Sink into one of the cabana lounges, wine in hand and pick at a selection of fresh oysters that are served with a myriad of accompaniments including marinated with chilli, lime and gin, Margarita lime sorbet and Yuzu foam and picked seaweed or pick at a selection of the appetising appetisers. For mains, the culinary maestro, Issey Loving, has compiled a fanciful menu that offers modern Australian fare with a touch of French flair and rustic Polynesian flavours, a nod to his heritage. The fare, an experience in itself, is designed to complement the vast drinks list that offers no less than five different kinds of Veuve Clicquot. The Covenant offers the perfect backdrop for an after-work beverage and some tapas or an elegant fine dining experience.
