Rosella’s is an Australiana-themed bar, nestled along the Gold Coast Highway in the heart of Burleigh Heads, which gives a fun and delicious nod to times gone by. The 34-seat bar is equipped with classic Aussie vibes and plenty of personality – think less rubber thongs, singlets and VB tinnies, and more so a refined representation of iconic Australian cuisine and a modern take on childhood nostalgia, with a good dose of tongue-in-cheek humour on the side. You can bite into piping-hot jaffles with fillings like Vegemite, cheddar and wattleseed butter, and if you order a round of fresh local oysters, which come topped with native finger lime and shaved macadamia, it’ll arrive ‘smoko style’ on ice inside a styrofoam esky. It’s fun and colourful behind the bar with concoctions like the signature Rosella cocktail with vodka, Australian bitters, rosella jam, lemon and lilly pilly, through to Pasito gimlets, Zooper Dooper sbagliatos and lamington espresso martinis. There’s an all-Australian line-up of tap and canned beers, and an intriguing series of natural wines from small-batch producers.
