Isla Cantina
Tacos! Excellent, now we have your attention, we’d like to introduce you to Isla Cantina. The restaurant has assumed a primo waterfront perch at Capri on Via Roma (neighbouring Edgewater Dining + Lounge) and delivers a casual-yet-cool dining experience. As for the all-important eats, the menu was designed by Mulpha’s area executive chef for Queensland Mark Marshall and puts a Cali-twist on Mexican faves with a lean to showcase fresh seafood including cachaca-and-lime-cured ocean trout, spanner crab tostada with jalepeno-lime mayonnaise, snapper ceviche and the Cal-Mex staple snapper taco. Carnivorous folk can feast on Adobo-barbecue chicken, eight-hour slow-roasted lamb barbacoa or flank steak with bone-marrow butter, fire-roasted onions and tomatillo salsa. Can’t decide? Opt for the Isla Feast menu, just be sure to leave room for a barbecue pineapple or chocolate-and-chipotle mousse. Isla Cantina is managed by Pablo Uribe, who brings his South American flair to the venue, including adding some authentic Mexican cocktails to the selection of sips, which includes classics such as Paloma and margarita alongside more unusual creations such as chelada (a Mexican beer cocktail) and michelada (Mexico’s take on the bloody Mary).
