It’s hard to miss the striking yellow and blue exterior of Honeybee & Saint on the Gold Coast Highway in Mermaid Beach and yet somehow it is easy to do just that. The bright and airy cafe is the work of long-time pals Larisa Donovan (the saint) and Melissa Tocker (the honeybee), who are no strangers to the hospitality game but it’s their collective background in retail that makes all the difference. Here, nothing is too much trouble. Need to move tables to accomodate a larger group? No problem! Fancy crispy bacon? Totally fine! If you’re in need of a caffeine hit, you’re in luck because Honeybee & Saint prides itself on its consistently good brews using Di Bella Coffee. The food menu meanders from breakfast classics such as eggs bene with freshly made hollandaise through to the slightly indulgent (but totally worth it) triple-stack pancakes available in plain, choc chip, banana and berry. For midday munchies, there are some seriously good-looking salads on offer but if that feels a bit healthy, there’s always the burgers. The best part? Everything on the menu comes in well under $20. Oh and they open from 6:00 am daily.
