Sisters Holly and Amy Prosser recently opened the doors to Heven-yah in Mermaid Beach, after transforming a vacant shop just next door to Alfred’s Apartment into a bright and sleek industrial-style gelateria. The sisters’ collective passion for food and local produce shines throughout the rotating menu of flavours, resulting in flavours like grapefruit and Campari, French tarragon with raspberry and meringue and almond milk chocolate. Each week, the they hit the Murwillumbah markets to gather the best quality local and pesticide-free ingredients. So, whatever produce is in season and at its best, is what you’ll find in the Heven-yah gelato line-up – the menu is constantly changing, with unique new flavours that put a gourmet spin on the traditional art of gelato making.
