Bar Heather
Bar Heather is a 60-seat restaurant and wine bar operated by the team behind Luna Wine Store. The venue, located on Jonston Street in Byron Bay, specialises in natural vino and wine-friendly snacks, with a lively ambience propelled by afrobeat, funk and late-disco tunes. Helming the kitchen is chef Ollie Wong-Hee, who will be doling out snacks, small dishes and larger share-style plates like potato chip with comte and shiitake, duck confit with betel leaf and kohlrabi and grilled king green prawns bathing in a sauce made from its shells and curry leaf. A revolving wine list will showcase a range of low-intervention drops, offering plenty of wines by the glass and exclusive back vintages from producers like Matassa, Alessandro Viola and Gut Oggau. The crew has linked up with Miles/Thorp Architects and CADRE Building Co to help fashion the venue’s interior, which will boast the likes of aged green-leather banquettes, French wooden flooring, hanging art, and a mortadella-coloured marble horseshoe bar.
