What happens when a triathlon-winning chef with a background in five-star hotels jumps on the food truck bandwagon? Great things, that’s what. Ryan is the coronary-conscious chap behind Thunderburger1, a relatively new addition to the Gold Coast’s gaggle of food trucks.

Thunderburger1 opened the hatches in late 2014 to deliver fresh, wholesome stacks to burger loving market goers and revellers of all kinds. The modest menu offers the choice between four regulars that cover your main meat varieties – lamb, pork and chicken – with one non-carnivorous option and one constantly evolving special. What Thunderburger1 lacks in choice it makes up for in taste. Bite into the mushroom, halloumi and roasted capsicum for a refreshing meat-free meal or get stuck into the pulled lamb with radish, sultana and mint jelly or the ever popular chicken with avocado and chipotle mayo for a satisfying spread. No matter what you pick, these $10 towers of goodness will quell your burger craving in a jiffy.

Unlike your regular garden variety of burger, Ryan uses lean cuts of meat and removes any fat before cooking before piling it onto a wholemeal seeded bun and topping with locally sourced fresh produce so it’s kinder on your waistline. Wash it down with a Gingerella, Lemmy Lemonade or Karma Cola from the range of organic fair trade drinks that Ryan has sourced from New Zealand.
