Whoa! Things are about to go next-level at The Star Gold Coast. Renowned restaurateur Simon Gloftis and nightclub identity Billy Cross have joined forces with The Star to create an opulent new multi-million-dollar rooftop restaurant and lounge bar, which will be located on the top floor of the property’s soon-to-open luxury hotel named The Darling.

Simon Gloftis, the former owner of The Fish House who is fresh off the back of a $2.4-million transformation of iconic Nobby Beach eatery Hellenika, will team up with entertainment guru Billy Cross to co-manage the venue with The Star Gold Coast. It’s yet to be named, but we’re told the new 110-seat dining space and lounge bar will be open in March 2018.

The impressive rooftop space will boast spectacular skyline views, with the restaurant’s dining area to open out onto the hotel’s luxurious infinity pool. The restaurant will also feature a private dining area to cater for intimate functions. The stylish bar will fit around 300-500 guests and is set to feature an extensive collection of cocktails and beverages, as well as private booths and a VIP bar.
