The Grocer: Coconut Flour

The Grocer: Coconut Flour

Everyone seems to be going crazy for coconuts lately, and there’s good reason why. Nourish that body of yours by swapping your standard flour for cup of the coconut stuff.

Coconut flour is a soft, fine powder produced from dried coconut meat. Popular with those who adhere to grain-shunning diets, like paleo, coconut flour is a gluten-free, protein-rich alternative to the traditional baking staple. But the benefits don’t stop there. It’s also rich in fibre and good fat, making it exceptionally filling, and is a good source of manganese, which supports bone health and nervous system function.

Thanks to its incredible absorbency, a little coconut flour goes a long way, so be sure not to substitute it with your grain-based flours at a 1:1 ratio. The general rule is to swap out one cup of grain-based flour for 1/3 cup coconut flour. While we’re all for experimenting, perhaps use some tried and true recipes to avoid any kitchen mishaps! Try your hand at a quick and easy double chocolate mug cake, coconut flour pancakes, sweet paleo muffins, or banana, coconut and goji berry bread.
