The Don arrives in Burleigh town with woodfired pizzas, chocolate negronis and Italian street eats

The team behind popular Mexican eatery Margarita Cartel, which opened in Burleigh Heads in September last year, has expanded its mafia-themed footprint – this time, they’re going Italian with a new pizza and pasta spot named The Don, located just two doors up. Like the sound of pepperoni pizzas and chocolate negronis? Then you’ll want to get acquainted with this new Italian bad boy when it opens on Thursday October 8.

The Don is the latest arrival to the bustling lower Gold Coast Highway strip that also houses Light YearsCommune, The Little Plate and Street Corner Espresso. The neighbourhood eatery (which takes the former Thai restaurant space) is all about comforting eats inspired by various Italian regions, with authentic woodfired pizzas and handmade pastas in the spotlight. The vibe at The Don is intentionally casual, with mostly street-side seating that encourages locals (that’s you) to embrace the laid-back atmosphere with a slice of pizza in one hand, and a limoncello spritz in the other.

The menu covers classic Italian comfort food and homestyle favourites, with smaller plates like burrata with pesto and confit tomato, moreish ‘meat lovers’ arancini and Northern Italian-style fish croquettes kicking off proceedings. Handmade pastas like pillow-soft gnocchi and ravioli stuffed with pumpkin and spinach and ricotta sit alongside The Don’s mouth-watering list of simple and authentic woodfired pizzas like margheritas and deliciously uncomplicated pepperoni and olive. There’s also a ‘rolled chicken parmigiana’ – deep fried with a belly of molten mozzarella – which The Don team dubs as a new take on an old-school dish. Behind the bar, Italian-style cocktails reign supreme – choose from four different negronis (including chocolate and coffee) and four different spritzes (from classic Aperol to a zesty limoncello number). There’s also a concise list of Italian vinos and imported beers for your sipping pleasure.

While The Don may sit two doors up from its sibling Margarita Cartel, the alfresco seating merges together and the two venues are essentially unified – which means no matter where you sit, you can order off either menu. So, you can enjoy a pizza and a glass of vino (care of The Don) while your mate, sitting at the same table, can tuck into tacos and margaritas from Margarita Cartel. If you still can’t decide, The Don team has a slightly unconventional solution for you – a Mexican pizza topped with pulled pork and jalapenos.

The Don will open at 5:00 pm on Thursday October 8. For its address, contact details and booking info, click over to our Stumble Guide.
