Years after a fire tore through the building, the former Sanctuary Cove Tavern has been given an elegant makeover befitting its exquisite location overlooking the marina.

Sink into one of the cabana lounges, wine in hand and pick at a selection of fresh oysters that are served in a myriad of ways including marinated with chilli, lime and gin, Margarita lime sorbet and Yuzu foam and picked seaweed to start. If you fancy a little taste of everything, the starters and share plates present some appetising appetisers. Choose from Szechuan pepper spiced prawn atop a bed of charred watermelon and coconut crisp salad, smoked corn tamales and confit spicy buffalo-style chicken wings among many. For an entree with a theatrical twist, the chicken, lemon and wild mushroom soup is brewed at your table using a vacuum siphon that is traditionally reserved for coffee. Watch as the soup bubbles into the top chamber before being dramatically sucked back down and poured into your bowl. For mains, the culinary maestro, Issey Loving, has compiled a fanciful menu that offers modern Australian fare with a touch of French flair and rustic Polynesian flavours, a nod to his heritage. The superlative selection offers a chicken, prawn and chorizo terrine that is served with sweet potato crisps and baby leek, Flinders Island milk-fed lamb shoulder that is accompanied by black pudding and leek roulade and an Abalone tasting plate that showcases Abalone three ways; as a Boston-style chowder finished with crème fraiche, poached with tom yum broth and char-grilled with pea puree and roasted Kipfler.

The Covenant is inspired by owners Mathew and Liz Henry’s travels to Dubai and the south of France, fitting given the venue’s position overlooking Sanctuary Cove’s resident superyachts. The sophisticated new eatery would be right at home perched along the Boulevard de la Croisette in Cannes. The fare, an experience in itself, is designed to complement the vast drinks list that offers no less than five different kinds of Veuve Clicquot.
