Sundowners and dumplings – The Collective launches Better Together Sundays

As the weekend draws to a close, there tends to be two kinds of people – the kind that are already mentally prepping for the week ahead and the ones that are keen to milk every last drop of leisure time. If you firmly fall into the latter category, or just enjoy sipping cocktails and devouring dumplings as the sun sinks, The Collective’s brand-new Sunday session is definitely up your alley. Gins and tins, what more could you want?

As the old adage goes, a Sunday well spent brings a week of content. So really, Better Together Sundays is an investment into your future happiness. For just $69 per person, you and your pals can savour two hours of sensational gin cocktails, beer and cider alongside plates from the much-loved Asian eatery Umami. Signalling a potentially hazardous situation for those of us who work on Monday, the package includes sips such as The Agricole (Husk’s Agricole rum, St Germain, fresh passionfruit, lemon juice and syrup topped with soda) alongside G&Ts using Murwillumbah’s popular purple tipple – Husk’s Ink gin. Beer more your vibe? While away the arvo with a tin of Young Henry’s lager, pale ale or cider – cheers to that, friends.

A bottomless soiree wouldn’t be complete without a tasty spread to match and Umami’s Asian-fusion kitchen definitely does not disappoint. Start with a serve of edamame with crispy shallots before wrapping your mitts around the vegetable-stuffed spring rolls with red-garlic vinegar sauce. Finally, pinch your chopsticks around crispy chicken-and-mushroom gyozas plunged into ginger-plum sauce and Japanese seaweed. Soul Cutze will also be on hand to ensure the good vibes will be as free-flowing as the drinks. The festivities kick off every Sunday from 3:00–5:00 pm so if sipping cocktails and devouring dumplings on the rooftop sounds like a pretty excellent way to spend a sunny Sunday afternoon, rally your crew and jump over to The Collective’s website to book. To secure your spot, reserve a table for 3:00 pm and write Better Together in the special requests and you’ll nab a great table on The Rooftop to enjoy the festivities.
