Chances are you’re familiar with The Byron at Byron – either you’ve stayed (lucky you) or it’s on your bucket list. Either way, here’s another reason to head back down to check it out … not that you needed it. After a major transformation, the luxury resort has recently unveiled it’s new-look restaurant and bar – and boy is it impressive. Come and take a look inside.

Renowned UK-born chef Matthew Kemp, former owner of Sydney’s Restaurant Balzac who also cut his teeth at Square in London and Banc in Sydney, is heading the newly relaunched kitchen at The Byron at Byron. The menu will remain fluid and constantly evolving, featuring dishes that have been crafted to best reflect the tastes, seasons and climate of the Byron Bay region, whilst weaving in European elements and Asian flavours. We’re told to expect unique and inspiring cuisine with an elegant and sophisticated touch.

The fit-out is just as impressive as what appears on the plates, with one of Australia’s leading interior designers Luchetti Krelle enlisted to take the space to dizzying new heights. Statement features like the copper-trimmed island bar cut a striking figure in the open and breezy space, which seamlessly merges with the sun-kissed verandah area. The walls are adorned with a well-curated collection of art, antiques and curiosities, including a series of still-life paintings by 2014 and 2015 Archibald Prize finalist Julian Meagher.
