Burleigh Heads welcomes new pastry wonderland and brunch haven Tarte Bakery & Cafe

For the past few months, all eyes have been on the expansive corner site at the top of Burleigh’s James Street, which for more than 20 years housed Italian restaurant Vecchia Roma. The prominent premises has been given a new lease on life thanks to Chloe Watts, the former owner-operator of Paddock Bakery, who will officially unveil her latest project, Tarte Bakery & Cafe, this Wednesday August 19.

Tarte’s opening is a culmination of many years of planning from Chloe who, after travelling the globe extensively, is aiming to bring the best (and most delicious) parts of some of the most fabulous cities in the world right here to the Gold Coast. After selling Paddock Bakery in 2019 – which she had owned and operated from 2017 – Chloe got to work on conceptualising Tarte Bakery & Cafe, melding a little bit of London with a hint of Paris and a dusting of West Village New York to create a worldly wonderland of rustic baked goods, hand-made sweet treats, mouth-watering brunch bites and specialty coffee.

From the 100-year-old timber front counter repurposed from a movie theatre in Northern New South Wales, to smaller antiques like the brass measuring cups (hanging off the side of the custom-made coffee machine) that Chloe bought while strolling through a flea market in Paris six years ago – every bit of Tarte’s interior tells a story. The hand-collected antiques are intentionally balanced out with modern design elements and custom-made furnishings to ensure that Tarte’s vibe hits that sweet spot in between elegance and comfort – while still keeping that laid-back sandy-footed Burleigh feel.

Due to restrictions, Tarte can’t operate at its full capacity of around 120 just yet – but there’s plenty of seating sprawled inside and out on the tree-lined footpath for breakfast in the sunshine, long lazy brunches and pastry feasts while watching passersby. The cabinet of daily baked delights will be the first to catch your eye, with Tarte’s team of pastry maestros rolling out an extensive spread of handmade sweets from the crack of dawn. Treat yourself to the likes of kouign amann (rounds of croissant-like dough slowly baked in sugar to give a caramelised outer layer), classic French canele, chocolate babka swirled with Nutella, cinnamon-dusted cruller doughnuts, traditional Italian cannoli with whipped ricotta and chocolate chips, picture-perfect individual meringues topped with blood orange and honeycomb, vegan dark-chocolate and praline tarts and so much more.

Tarte’s dine-in menu gives you a little bit of everything, from light bites to moreish hunger-busting eats. Think house-baked bagels topped with savoury combinations like ox-heart tomatoes, salted shallot, cream cheese and dehydrated olive, Turkish eggs in spiced butter with whipped Greek yoghurt and sourdough, and a breakfast burrito encasing double-smoked bacon, fried eggs, fried potato, peppers, cheese and jalapenos served with guacamole and hot sauce. Big night? The Morning After will cure you – a sausage patty, bacon, scrambled eggs, parmesan and a secret ‘hangover sauce’ sandwiched within house-made English muffins. French-style tartines are served all day with toppings like roasted grape with dark honey, lemon thyme, whipped buffalo ricotta and sea salt, rolling into lunch-style eats like milk-bun beef burgers, a poached-chicken sourdough sandwich with miso mayo, pickles, crispy chicken skin and watercress, French-onion soup with croissant croutons and fresh daily salads. Though, the decadent truffle-infused five-cheese toastie – complete with triple-smoked ham and mustard on sourdough with a side of pickles – is very hard to overlook.
