The space previously occupied by Meesh’s on the beach in Burleigh Heads has been transformed into Rick Shores, a modern Asian fusion restaurant with a colonial twist. The trendy eatery is from the team behind Brisbane’s popular LONgTIME restaurant.

For those who have been on the coast long enough to remember Rick Shores’ predecessor, you might be tempted to enter via the stairs underneath Oskars on Burleigh however the main entrance has been moved to the side of the building so you can literally stroll in off the sand, a nod to the kind of casually sophisticated environ the gents have created. An elegant timber bar on the far wall vies for your attention, so too does the bustling open kitchen to your right but try as you might, your gaze is immediately captivated by the glorious expanse of ocean that stretches out to forever. The new layout features three different levels so no matter where you are in the restaurant, you can enjoy the magnificent view.

If a casual bite is on the agenda, pull up a seat on the top level and pick at a plate or two of peppery betel leaf stuffed with soft shell crab and crisp apple slaw, beautifully fresh baos filled with barbecue roasted duck, plumb and cucumber or Thai Tuna tartare tacos from the bar snacks menu or head down a level to the main dining area for a more extensive selection. The yellow curry with king prawn, turmeric, coconut and kaffir lime leaf has been overwhelmingly popular but if the mercury is soaring, the vibrant Asian salads that are bursting with colours and oriental flavours offer a lighter alternative. The fare at Rick Shores is predominantly Thai-based but before you go thinking you’ve got them pegged, the varied menu offers influences from India, Vietnam and Japan to create a truly modern fusion and showcase the wizard-like culinary skills of Executive Chef Ben Bertei and Head Chef Jake Pregnell. Every dish offers an extraordinary attention to detail, a fact that will not be lost on you as you make your way through the bespoke menu. Pair your meal with a selection from the venue’s extensive wine list, which is littered with unusual, organic and biodynamic drops to pique your interest. If cocktails are more to taste, Rick Shores offers a selection of curious concoctions that have been created with Thai flavours in mind, think hints of chilli, ginger, coriander and coconut. Walking the line between fine dining and Gold Coast casual, Rick Shores is the perfect place for long lunches that effortlessly roll into evenings.
