Inspired by the passionate owner’s extensive time in Mexico, the constantly evolving menu at Pop Taco is 100% authentic, so you won’t find dishes of questionable meat drowned in pools of melted cheese here. Rather, you will be greeted with enticing totopos (chips and dip), freshly-made chipotle prawn tostadas with mango salsa and avocado and more substantial selections including a saucy enchiladas verde. The menu is prepared based on ingredients that Kristal has sourced that week and is designed to encourage people to try new things.

Pop Taco can also pack up its restored caravan and take the fiesta on the road for private functions and events.
