Poke bowls (aka the hip, fresh-faced sibling of sushi) are having their time in the sunshine again on the Gold Coast. Sure, there have been a few dedicated poke-bowl bars that have come and gone over the past two years, but nevertheless our appetite for this vibrant Hawaiian-born staple is still strong and sturdy. If you’re a fiend for the sashimi-topped bowls of goodness, then pay a visit to new arrival, Poké Lab.

Recently opening in Nobby Beach (next to Mr., just around the corner from The Arc), the coast’s newest poke bar is an intentionally fuss-free spot where it’s all about creating fresh, made-to-order bowls for local folk to enjoy on the regular. Poké Lab is owned by Tokyo-born chef Yuichi Koseki, who set out to develop a casual beachside dispensary that utilised the best local seafood and produce, all prepared and arranged delicately in eco-friendly bowls before your eyes.

Yuichi has melded Japanese flavours and ingredients with authentic Hawaiian poke-bowl elements, using this slight Asian lean to sway away from tradition to give poke-bowl lovers something a little different. You choose your base (brown or white rice, or greens), then your protein (including tuna and salmon sashimi, prawns, chicken and firm tofu), then add on all of the freshness and zing with toppings like wakame, edamame, fresh chilli and kimchi. For some crunch, get tobiko, agedama or crushed Japanese crackers sprinkled on top – then wash it down with tins of ice-cold green tea.
