Halcyon House’s Paper Daisy welcomes new executive chef Jason Barratt

Since chef Ben Devlin announced his first solo venture Pipit would be opening in Pottsville, we’ve been wondering who would be taking on the executive chef role at Halcyon House’s award-winning Paper Daisy restaurant – and our eager minds (and bellies) need not wait any longer.

Welcoming in the next chapter for Paper Daisy, Jason Barratt has been announced as the new executive chef helming the kitchen of the award-winning restaurant, bringing a wide range of experience to the role. As one of Australia’s most promising food connoisseurs, Jason joins Paper Daisy from his previous role as head chef at Raes on Wategos. Prior to moving north, Jason has had successful stints at several of Victoria’s most renowned institutions such as Stokehouse, Circa The Prince and Attica, and also owned cult Richmond sandwich shop Hector’s Deli.

Jason’s direction will continue to focus on uncomplicated dishes that take advantage of both local and native ingredients, retaining Paper Daisy’s reputation for refined Australian coastal cuisine. You can expect a different offering than before, however – Jason’s Paper Daisy menu will feature more pasta and slightly less formal dishes. Given the Cabarita Beach location, it goes without saying that the menu will continue to be seafood focused and heavily influenced by what is grown in the Northern Rivers region. With a passion for high quality, delicious dishes, Jason brings a pair of fresh eyes to the beachside restaurant, which will feature a full a-la-carte offering throughout the dining room and a bar menu available by the pool.
