The most luxurious new addition to the city’s dining scene, Nineteen at The Star, will officially open its doors this Saturday March 24. The opulent new dining space is located on the top level of The Darling hotel, which will also be unveiled this weekend. Friends, prepare for fine dining on the Gold Coat to be taken to dizzying new heights.

The details
Nineteen at The Star has come to life at the hands of renowned restaurateur Simon Gloftis and entertainment guru Billy Cross, who will co-manage the high-end restaurant and bar in conjunction with The Star Gold Coast. As the jewel in the crown of The Star’s sophisticated new hotel, The Darling, Nineteen is set to introduce an entirely new dining experience to the Gold Coast. The venue features a 110-seat restaurant and an ultra-luxurious lounge bar, boasting capacity of 300-plus guests.

The food and drink
The restaurant itself delivers a high-end, produce-driven menu with a focus on elegance and simplicity, all under the well-credentialed eye of head chef Kelvin Andrews. Expect a level of finesse that is balanced perfectly with Simon Gloftis’ renowned down-to-earth approach. While the menu will evolve in line with the nature of the produce, Nineteen’s offering features dishes like grilled Patagonian toothfish with burnt miso, raw yellowfin tuna with Royal Miyagi oyster with Oscietra caviar, as well as steamed coral trout with fresh ginger. Though, we’re particularly interested in Nineteen’s signature dish – the slow-cooked rock lobster bolognese. From the land, you can expect clean and refined dishes like the roast highland duck with foie gras, or opt for the 400-gram kiwami wagyu sirloin, which is designed to serve two. Nineteen’s spectacular wine cellar is brimming with around 2000 wines, each hand-selected in consultation with some of the country’s leading sommeliers.

The space
Award-winning firm Mim Design are behind Nineteen’s glorious interior, which perfectly captures its sky-high location with bold architecture, high ceilings and uninterrupted coastal views. The aforementioned double-height frameless wine cellar and the sparkling floating chandelier are the first to catch your eye in the restaurant, before you’re drawn to the alluring curved staircase that leads to the exclusive private dining room and cognac bar. Then, there’s the glamorous rooftop bar – a classy and elegant space with sophisticated tipples, VIP bottle service and some of the most spectacular sunset views you’ll find. This truly is a next-level experience … well, nineteen levels to be exact.
