Way back when (well, five years ago), Akira Tagaki opened Muso Ramen & Gyoza Bar in Mermaid Beach. That was before ramen was cool. Then, everyone cottoned on to how delicious and cool these piping-hot bowls of goodness actually were – and Muso began bursting at the seams. Earlier this month, the coast’s OG ramen hang finally expanded and unveiled its rockin’ new digs to the noodle-loving masses. Here’s what’s in store from Muso 2.0.

We’ve got a lot to thank Akira Tagaki for. After all, he was one of the first to enlighten our tastebuds and bring a dedicated authentic ramen bar to the Gold Coast, dispensing rich tonkotsu and chicken ramen, as well as glorious gyoza. The new-look Muso, still on the Gold Coast Highway in Mermaid Beach, has more than doubled in size and has been completely transformed sporting a hip new look courtesy of local genius OJ Thompson (the creative behind the likes of Etsu, Ally Chow, Two Wise Fish and Double Barrel Kitchen).

While Muso’s food is as authentic as it gets, Akira aims to please all tastes by meticulously balancing tradition with modern flavours. The balancing act extends into Muso’s general vibe too – for example, the ramen master crafting authentic noodles from behind a viewing glass will be doing his thing while tapping his toes to Nirvana’s best hits (what a combo). It wasn’t just the space that had an overhaul – Muso has also unveiled a new menu where you’ll find a new rotating tapas selection with the likes of tender sous vide chicken with house chilli sauce, as well as regular ramen specials like the chilli-tomato ramen topped with chicken char su, melted cheese, basil pistou and 75-degree eggs. There are a bunch of new hard-to-find sakes, umeshu (plum wine) and Japanese beers to wash it all down with.
