Meat Buns takes over Bine Bar & Dining’s kitchen to bring bao, noodles and buns to your Tuesday

It was mid-2018 when our tastebuds were first seduced by Meat Buns, a street-food operator specialising in crispy spheres of pizza-like dough encasing mouth-watering combinations like slow-cooked pastrami, pickles and cheese. Previously, Meat Buns’ moreish goodness was only available on weekends at the BBQ Bazaar markets, but now owner and chef John Watt (ex-Bam Bam) is fuelling your addiction by taking over the kitchen at Bine Bar & Dining in Nobby Beach for a mid-week feast.

The Meat Buns takeover of Bine happens every Tuesday night – and while the signature rounds of baked dough will always be the hero, John is making the most of having an entire kitchen to work in, and has dropped a series of fun and tasty new dishes that are exclusive to the weekly takeover. Now, let’s not forget that this is the same kitchen that catapulted vegan ramen gem i like ramen from a humble street-food stall to a wildly popular plant-based fixture, now with locations in Miami and Brisbane’s Fortitude Valley.

So, the weekly Bine takeover sees the Meat Buns offering expand from its signature rounds of crispy dough and Reuben spring rolls (yum) to now include series of pillow-soft bao buns with delicious fillings like katsu chicken with pickled slaw and puffed tofu with ssamjang. There’s also an intriguing Italian-inspired meatball bao, where a giant pork meatball topped with red sauce, crispy sage and parmesan is lovingly jammed inside a deep-fried bao bun. It doesn’t end there – the weekly takeover will also feature traditional Thai ‘khao soi’, a noodle dish steeped in delicious yellow curry topped with chargrilled chicken, pickled slaw, fresh herbs and roti, as well as thrice-fried potatoes with tomato adobo and fresh green-papaya salads with prik nam pla sauce.

The Meat Buns X Bine kitchen takeover kicks off at 4:00 pm every Tuesday. Get on it.
