Poke bowl lovers, this one’s for you – the Gold Coast’s first poke-bowl food truck is here! The poke-bowl game has flourished across our fine city over the past year and now, much to our delight, Kombi Fresh is bringing the delicious Hawaiian bowls of goodness to the streets.

That’s right pals – poke bowls are now on wheels. Well, actually it’s a rad-looking 1970s caravan to be exact. Kombi Fresh owners, Brazilian-born duo Rodrigo and Roberto, enlisted Byron Bay-based interiors and creative firm Buckworth Co. (also behind the fit-outs of venues like La La Land and Fins) to give the caravan a new lease on life. The transformation project used recycled scrap metals and repurposed materials, with everything from old car headlights to the windows from a retro ambulance utilised to give this old-school caravan as much personality as possible.

What about the poke bowls? Well, the entirely gluten-free menu is kept really simple with three flavour combinations to choose from, based on which protein you’d prefer – fresh salmon, tofu, teriyaki chicken or falafel. Once you choose your base (brown rice, coconut rice or glass noodles) your poke bowl is made fresh while you wait, using ingredients like wakame salad, pickled ginger, fresh vegetables and even sauerkraut. Yep, this is one food truck you’ll definitely want to stalk. Kombi Fresh is already hitting a few local markets – head over to Instagram to follow its movements.
