Kiyomi brings a taste of Japan to Jupiters Hotel & Casino
Named after a rare Japanese citrus fruit that exists somewhere between a mandarin and sweet orange, Kiyomi is the latest gastronomic offering at Jupiters Hotel & Casino and is set to open its doors to the public today.
Featuring unique yet simple flavour combinations, Kiyomi is a celebration of cutting-edge Japanese cuisine. The menu, curated by internationally renowned Executive Head Chef, Chase Kojima, offers traditional Japanese-style delights with a modern twist and includes scampi with foie gras, white soy, apple and mizuna salad, as well as binchotan duck breast with beetroot, sansho pepper and wasabi, and salmon robata with ssamjang miso and watercress.
Known for experimentation and creativity, Chase is the founder of Sydney’s Sokyo, which was awarded One Chef’s Hat at the 2014 The Sydney Morning Herald Good Food Guide Awards. His extensive knowledge and passion for food stems from his grandfather, a fisherman in Hokkaido, and his father, Sachino Kojima, talented Japanese chef and owner of the renowned Kabuto Sushi Restaurant in San Francisco, USA.
Kiyomi celebrates the experience of shared dining and offers an exciting food and beverage menu bursting with Japanese tap and bottled beers, sake, shochu cocktails and Japanese whiskies. The décor, designed by Luchetti Krelle, is inspired by Japanese minimalism, layering cultural cues with sharp contemporary detailing and features a bespoke art installation by Japanese street artist Houxo Que.
Kiyomi officially opens to the public on December 23 and is part of Jupiters Hotel & Casino’s $345 million transformation. See our Stumble Guide for opening times.
