Byron Bay welcomes five-star Hotel Marvell alongside new seafood-centric restaurant, Bonito

Hotel Marvell was always destined to turn heads. Touted as Byron Bay’s first and only five-star hotel, it’s also delivered the town’s first rooftop bar and pool, setting the scene for summer sips and dips. Welcoming its first guests in August, the visionary project was brought to life by owners, Scott Didier and Scott Emery, and designed by renowned architect Harley Graham of Harley Graham Architects. The hotel’s unique tropical aesthetic is intended to capture the essence of Byron Bay’s eclectic, warm, and colourful atmosphere. Hotel Marvell offers an array of elevated accommodation options, including 16 hotel rooms, six suites and two two-bedroom hotel rooms, that start from $650 per night.
Hotel Marvell demonstrates a local-first sourcing philosophy, which extends to the signature dining offering at Bonito, located on the ground floor.. Open to the public, the restaurant is led by the award-winning chef Minh Le. A celebrated chef with more than 20-years experience, Minh’s journey has included stints at some of Australia’s most esteemed establishments, including Spices Peak Lodge, The Byron at Byron, and The Foraging Quail. At Bonito, Minh Le has fused his heritage and passion for seafood and plant-based cuisine, creating sense-enlivening dishes that reflect the venue’s ethos of sustainable and responsible dining. Begin your culinary journey with the organic sourdough slathered with house-cultured miso butter, followed by oysters dressed in a Japanese dressing and adorned with tobiko, and Hiromasa kingfish glazed with a spiced soy sauce and served with shallot relish and Petuna trout roe. Each dish is intentionally crafted to marry contrasting flavours and textures to delight and intrigue.
