Get into the Christmas spirit with gin-infused pudding from Four Pillars

Christmas and alcohol go hand-in-hand – it’s called the silly season for a reason. We can’t imagine an office Christmas party without a few, or a family lunch without a little something to take the edge off! When Four Pillars announced a gin-infused Christmas collection of drinkable and edible treats, we knew they were onto something special that would get us in the festive spirit.

Four Pillars’ famous Australian Christmas Gin is the invention of distiller Cameron Mackenzie, who drew inspiration from his late mum Wilma’s Christmas puddings. The result is a unique spirit that smells like gin and tastes like Christmas. In what feels like fate, Four Pillars were left with an excess of oranges (a by-product of the Christmas Gin making process). In an effort to reduce waste, they turned to local producer Elisha to create a Christmas Gin Pudding using these oranges and the result is a rich and flavourful dessert that Wilma would be proud of.

Earlier this year, Four Pillars got award-winning Australian chef Matt Wilkinson on board as creative director of their Made from Gin food products. For this year’s Christmas collection he’s whipped up a Rare Dry Gin Glaze (also made from botanicals and oranges left over from the distillation process) as the perfect accompaniment to your festive roast. To complete the collection, Matt created the Cranberry & Gin Orange Relish (again from gin by-products), a tasty finishing touch to add to your Chrissy leftover sandwiches. All products in the Four Pillars Christmas collection are wrapped in labels designed by Tim Summerton – they feature artwork of the vibrant Illawarra Flame Trees from Tim’s garden, their blooming acting as a visual reminder of the coming holiday season.
