Learn the art of birria and how to make Clay Cantina’s famous enchiladas at July’s cooking classes
Clay Cantina, nestled down an unassuming Coolangatta laneway, has become one of our all-time fave spots for Mexican morsels and margaritas. Everything about the tiny hole-in-the-wall space, from the music to the selection of dishes that grace the menu, are testament to owner Kristal Smith’s passion for authenticity and connection. From July 22 to 28, Kristal is closing the restaurant’s doors to host a series of exciting cooking classes featuring some of the venue’s most beloved menu favourites.
While some venues guard their recipes as if they are a matter of national security (lookin’ at you, colonel), Kristal Smith from Clay Cantina is quite the opposite. Not only does she want to share with you all of her culinary secrets, but she’s hosting a series of cooking classes to make it fun and enjoyable. While the classes have always been part of Clay Cantina’s offering, they’ve been on the back burner while the attention-hogging restaurant commands Kristal’s attention. Following repeated requests from regulars (us), she’s unveiled an entire week of classes.
Anyone who has attended one of Clay Cantina’s cooking classes can attest, it’s not just about food. It’s about learning new things, connecting with fellow food enthusiasts over a shared experience and cooking up a storm over a margarita (or two).
Kicking things off on Thursday July 25 is a three-hour cooking social where you will learn how to make the most coveted item on Clay Cantina’s menu – the enchiladas. Saturday July 27 is all about crafting tortillas, pickles and cochinita pibil, which is cooked in banana leaves. Rounding out the week on Sunday July 28 is the five-hour masterclass where you will deep dive into the tradition of birria and its rich consomme. As an added bonus, Kristal will be compiling ingredient packs that will be available for purchase on the day for you to replicate the magic at home.
