From the mastermind behind Kirra’s Burger Lounge, Jason Steele, Chubby’s Diner adds an American flavour to the Gold Coast’s fleet of food tucks. The retro-style mobile eatery serves up an evolving spread of USA classics including ribs, brisket, southern-fried chicken and burgers. Slathered with Chubby’s own secret barbecue sauce, habanero mustard and house-made pickles, the eight-hour smoked brisket sliders is undoubtedly one of the highlights alongside Chubby’s famous cheeseburgers. Proving that they aren’t just a cheeky treat for kids, the cheeseburgers contain quality grass-fed mince topped with dirty American cheese and are smoked for about 20-minutes or just long enough for the cheese to absorb the flavour of the maple and hickory wood and finished with tangy barbecue sauce and pickles.

Despite Chubby’s Diner’s mobile ability, the nosh is not your average market fare. In terms of quality, Chubby’s Diner is on par with its sister venue and uses the same grass fed meat and local suppliers as you’ll find at Burger Lounge. The relishes, sauces and mustards are house-made and packed with goodness and flavour.
