Chalky’s Biltong raising the bar
Rich with flavour and unexpectedly tender, Chalky’s Biltong, handmade in Miami, is upping the ante on dried meat products on the Gold Coast.
After becoming dissatisfied with the standard variety of bagged biltong, local lad Dane Chalk began toying with his own recipe in his garage. Skip forward six years and what began as an after work hobby has grown into a full-blown obsession with Chalky’s Biltong now stocked at The Cambus Wallace, Bine Bar & Dining and Nobby’s Beach Gourmet Meats.
Chalky’s Biltong only uses high quality, ethically-produced Byron Bay Free Range Beef and is handmade in small batches right here in a commercial kitchen space in Miami.
The process takes the better part of seven days and involves a range of intricate steps and mixes that Dane has mastered to deliver a product that is tender and flavoursome. Reserved for distinguished gentlemen, Chalky’s Biltong isn’t your standard service station variety. It’s all natural, low sodium and has no added preservatives. It’s also completely Nitrate-free and totally addictive.
Along with fellow carnivores, Chalky’s Biltong is also surprisingly popular among the health conscious as it is packed with good enzymes and protein.
Chalky’s Biltong is available in two flavour combinations for now, Original and Chilli Royale, although there are plans to introduce a third variety in the not-too-distant future.
