The maker of Brookie’s Gin, Cape Byron Distillery, has decided to turn to the dark side – we’re talking about dark liquor, of course! The Byron-based booze-makers have announced the launch of their highly anticipated first release, Cape Byron ‘The Original’ Single Malt Whisky. Here’s everything you need to know about the whistle-wetting tipple …

Co-created by master distiller Jim McEwan (also known as ‘The Cask Whisperer’) and Cape Byron Distillery co-founder and distiller Eddie Brook, Cape Byron Distillery’s single-malt whisky is a good ol’ Aussie take on a classic Scottish whisky. Born in the rainforest and sunsets of Byron Bay, Cape Byron ‘The Original’ Australian Single Malt Whisky (on sale for $125) is a sweet sip that’ll transport your taste buds to dessert heaven. Drinkers can expect tastes of soft vanilla, creme brulee and biscotti, layered over distinct notes of pear, coconut and buttery macadamia. Now, that’s one decadent drink!

The distillery has also concocted a second limited-release whisky, the Cape Byron Chardonnay Cask Australian Single Malt Whisky (with a price-tag of $140). This sophisticated spirit was matured in Australian chardonnay casks and exudes decadent notes of chocolate and hazelnut praline, layered over fruity characteristics of raisin, baked apples and maple. You better get in quick if you want to get your hands on this taste bud-temping drink as only 1550 bottles of the first batch have been released! Looking to the future, Cape Byron Distillery plans to release 14,000 bottles of whisky during its first year. To grab one of the first bottles, head online to the Cape Byron Distillery website, or make tracks to the cellar door in Byron Bay. The whiskies will also be available to sample in premium bars and to buy at independent liquor retailers.
