Long before the sun rises, the bakers at Burleigh Baker are toiling away at their bakehouse in Varsity Lakes handcrafting delicious artisan bread ready for the morning’s trade from their shop front on James Street in Burleigh Heads. The award-winning bread has become an institution on the Gold Coast supplying numerous cafes and restaurants who all swear by the Burleigh Baker. The bread uses organic or certified chemical and additive-free ingredients and a long, cool fermentation process to develop the complex flavours of the dough. The fermentation process can range from 12 to 48 hours depending on the type of bread being made and you can be assured there are no short cuts, or compromise, just patience. The added preparation time makes the bread easily digestible, even among some people with gluten intolerances as the lactobacillus in the sourdough leaven breaks down the protein, which when combined with organic flours and no commercial yeast, makes all the difference. It also tastes pretty amazing, too.
