From the production of Brookie’s Slow Gin, Cape Byron Distillery is left with kilograms of gin-infused Davidson plums, the special ingredient that makes its gin so unique – and delicious. With sustainability at the core of everything the distillery does, the creative crew decided to repurpose these plums with fresh Davidson plums to create Brookie’s Byron Slow GinJam, a mouth-watering spread that is well worth a taste test.
GinJam is a perfectly balanced tart, sweet and tangy jam that is – bonus – both vegan and gluten free. It can be be spread on your morning toast, a freshly made scone or you can even add it into an at-home cocktail. If you’re serving it to little ones, don’t fret, as GinJam is (unlike its name suggests) alcohol free.
