Have you ever noticed how certain cuts of meat experience a sudden surge in popularity and before long, it’s infiltrated every menu you see (looking at you, pork belly)? Black Sheep Bistro in Oxenford is going against the culinary fashion trend to adopt a nose to tail philosophy so the whole animal is used, not just the trendy cuts.

One look at Black Sheep Bistro’s blackboard and it becomes abundantly clear that this is not your typical suburban restaurant, rather than sirloin you’re more likely to find brisket and alongside pork belly, you’ll also find pork shoulder. The blackboard menu reflects the establishment’s ‘no waste’ philosophy and is constantly changing depending on what owner and chef Sian Bressolles has on hand. Sian works hard to eliminate waste, not only because it makes good business sense but because having grown up in a farming community, she has an inherent appreciation and respect for food. Judging from the packed dining room, locals have well and truly embraced Sian’s ethical eating movement.

Get your weekend off to a stellar start with a breakfast burger or give the house favourite bubble ‘n’ squeak a whirl, for lunch, it’s hard to go past the steak sandwich and pulled pork burger. Drop in on Thursday evening for the brand new tapas night and munch on a selection of Kashmiri chicken kofta with coriander yoghurt and pita, soft shell crab sliders with sweet plum sauce and continental cucumber salad or pork chimmi change with Mexican crema and corn relish for just $10 per plate.
