No matter how high the temperatures rise or how sweaty you are, there is always a place for piping-hot bowls of Vietnamese pho in your diet. The traditional beef noodle soup is the specialty at Bay Pho – a Byron Bay-born Vietnamese eatery that recently ventured north to open a second outpost in Tweed Heads.

The unassuming Byron Bay edition of Bay Pho attracts avid pho slurpers in droves, and you can expect a similar situation at the Tweed Heads iteration – a casual day-and-night noodle house where it’s all about the food. Giant, fragrant bowls of pho noodle soup are undoubtedly the hero, served in combinations like the traditional beef, as well as beef brisket, chicken and tofu (or a combination of the lot). There’s also bowls of vegetable-laden egg-noodle soups dished up, topped with either crispy chicken or wontons, while those chasing a fresh bite can get their chopsticks around flavour-packed vermicelli noodle salads brimming with your choice of chicken, beef, spring rolls, salt-and-pepper squid, soft-shell crab, pork skewers or tofu.

There’s a series of colourful stir-fry dishes on offer, alongside sea-based dishes like salt-and-pepper soft-shell crab, and Vietnamese-style fried rice, which is sided with slices of crispy chicken or roast pork. For a smaller bite on the side, get your mitts around deep-fried pork skewers, pork wontons, spring rolls and made-to-order rice paper rolls encasing chicken, beef, prawns or tofu. Everything you see at Bay Pho is made in-house using fresh, local ingredients and age-old methods to bring diners the true tastes of Vietnam.
