Roco Ramen is hosting a two-week residency featuring Chef Daisuke Shibata from Tombo and Chef Wally from Bush Icecreamery from July 24 to August 3. This unique collaboration will offer a menu combining traditional Japanese flavours with innovative twists. Expect dishes like sashimi, charcoal-grilled plates and hand-made udon alongside delightful desserts.
Highlights include snacks like sweet bread katsu with shiro and tonkatsu, oysters with katsabushi vinegar jelly, pickled slimy mackerel sushi, lamb rump with sumac and tare and hand-made udon. For dessert, indulge in the ooray plum souffle with cumquat and cheese ice-cream, ooray sauce and salted Koji custard.
