Learn the culinary art of matching wine to fine food at the St Hugo Wine Dinner held at the InterContinental Sanctuary Cove Resort’s signature restaurant, The Fireplace.

On Friday March 22, InterContinental Sanctuary Cove Resort partners with one of Barossa Valley’s most iconic vineyards, St Hugo, to journey through a bespoke four-course menu paired with wine led by national wine specialist, Katherine Candy, including the sampling of limited edition wine, St Hugo Legacy ‘Last Letter’ Barossa Cabernet Sauvignon 2013.

Executive Chef Matt Hart’s menu has been curated to enhance every sip of the craftsmanship that is a St Hugo wine. Dinner commences with an oyster showered with granita, yuzu pearls, fennel pollen and tarragon matched to the 2018 St HugoEden Valley Riesling with an intense and generous palate of lime, white pepper and subtle talc.

Diners will enjoy Hiramasa, the king of the South Australian ocean, complemented by kalamansi, lotus, fine herbs, puffed wild rice, grapefruit, and a velvety avocado mousse that partners with the balanced taste of lemon zest, white nectarine and nougat in St Hugo Eden Valley Chardonnay 2017.

The hero of the evening is an eye fillet cooked in The Fireplace’s traditional wood-fired oven is coupled with the 2015 St Hugo Coonawarra Cabernet Sauvignon and a 75ml pour of the St Hugo Legacy ‘Last Letter’ Barossa Cabernet Sauvignon 2013. The ‘Last Letter’, a well-balanced hearty, dark fruit and oak flavour, is a limited edition wine, the first in the Legacy Collection from St Hugo.

For the grand finale of the gastronomy delight, guests will indulge in fine local fare from the Sunshine Coasts’ Woombye with a truffle triple cream brie served with dill and lemon cured pear, walnut, cheddar shortbread and watercress with the St Hugo Barossa Shiraz 2015, a brooding wine with full flavour.
