What’s better than a country escape? Why a country escape with cured meats, of course! Get ready to impress your friends at the next cheese and wine night with your very own handmade salami. The Hazelwood Estate is running Salumi Masterclasses on July 8 and 9, giving attendees the chance to gain insight into the ancient Roman techniques of salting, curing and drying meats.

This intimate class will be led by CLEAVER Salumi Cabinets founder and salumi aficionado Dave Cann. Against the breathtaking backdrop of the polo and Wagyu estate’s rolling green hills, guests will create their own salami for curing in the onsite CLEAVER Salumi cabinet that will be ready to take home in six weeks. By the end of the workshop, you will know your bresaola from your coppacolla, sample some left-of-field native flavours like quandong, bush tomato and pepper berry, and experiment with native spices to create the ultimate, hyper-local and sustainably produced salami.
