Winter smoothie recipe

In Queensland, smoothies are usually a year-round staple – a refreshing blended fruit concoction that satisfies both hunger and tastebuds. For those in Scandinavia, chilled smoothies in winter could mean a case of internal frostbite, which is probably why they’ve developed their own winter take on the smoothie. For a chilly Sunday morning, try this recipe for a Winter Smoothie from Collected Winter Recipes by Kristin Hove.

Serves 2

INGREDIENTS

2 cups forest berries
½ cup water
2 teaspoons freshly grated ginger
1 teaspoon cardamom pods, seeds removed
1 cup milk
¼ cup oats

TO SERVE

a few fresh blueberries
dark chocolate, grated

TO MAKE

Simmer the berries, ginger, cardamom pods and water for two minutes. Add the milk and oats and simmer for another 3 minutes. Blend quickly. Serve with berries and grated chocolate on top.

During the summertime you can makethis smoothie without the oats and leaves it in the freezer for a couple of hours, until it turns to slush.
