Munch on fresh turkey larb in cos lettuce cups
In this summer heat, all we are craving is something fresh, crunchy and delicious. Even better if it’s also good for us, and this recipe for turkey larb certainly fits the bill. Combining the zesty flavours of ginger, lime, lemongrass and chilli with minced turkey breast, served in a crisp cos lettuce cup, it is one of more than 100 recipes in Chrissy Freer’s new cookbook Real Delicious. INGREDIENTS
2 teaspoons macadamia or peanut oil
1 tablespoon brown rice
400 g minced turkey breast (see tip)
1 stem lemongrass, white part only, finely chopped
1 long red chilli, seeded and finely chopped
2 garlic cloves, crushed
1 tablespoon chopped coriander root
2 teaspoons finely grated ginger
200 g green beans, thinly sliced
1 tablespoon lime juice
1 tablespoon fish sauce
2 teaspoons brown or palm sugar
1/2 cup mint leaves
1/2 cup coriander leaves
1/2 small red onion, thinly sliced
2 cups bean sprouts, trimmed
8 cos lettuce leaves
Tip
Minced pork or chicken work well in place of turkey.
TO MAKE
Heat one teaspoon of the oil in a large wok or non-stick frying pan over medium heat and stir-fry the rice for one minute or until golden brown and aromatic. Cool, then finely crush with a mortar and pestle.
Add the remaining oil to the wok over high heat. Add the turkey and stir-fry, breaking up the meat, for seven minutes or until browned. Add the lemongrass, chilli, garlic, coriander root and ginger and stir-fry for one minute or until aromatic. Add the green beans and stir-fry for two minutes or until almost tender.
Stir in the lime juice, fish sauce and sugar. Remove from the heat and cool slightly then stir in the ground rice, herbs, onion and bean sprouts.
Spoon into lettuce cups to serve.
