As part of the transformation underway turning Iceworks into Darling & Co, attention has been paid to the discreet speakeasy destination located underneath. Formerly known as Dowse Bar, The Unforgiven is the name of the reinvigorated space, which has been shrouded in mystery until its surprise opening on Thursday November 26. Boasting a comfortable and exclusive atmosphere, The Unforgiven is a nice and secluded spot to sample a range of top shelf Australian spirits. Comfortable leather couches and modern light fixtures create a cosy atmosphere, while a vinyl record jukebox keeps the vibe seductive.

The backlit bar is full of bottles of brews sourced from around the country, complemented by a selection of wines from small Australian producers and international and local craft beers. 13 cocktails will be available – intriguing concoctions include The Astoria Fizz featuring Tanqueray, citrus, pineapple and roasted coriander syrup and the Rum Ting Tang, which includes Wray and Nephew, lime, bianco vermouth, mandarin juice, sugar and soda.
