Often praised as the most versatile of vegetables, the humble potato is far from boring. Coming in a variety of shapes, colours and sizes, your choice of potato should be dictated by what you are planning to cook and create.

Max is a proud farmer from the Darling Downs and has 1000 acres (which certainly elevates his ‘farmer’ status) where he has cattle and horses and grows potatoes, pumpkins and onions. The Spud Man, as Max is known around the market track, wholesales at the Brisbane Produce Market at Rocklea and attends the public markets of Kelvin Grove Village Market, Red Hill Farmers Markets and the Bardon Community Market.

The Spud Man has brown paper bags filled with all types of potatoes including royal blue, Dutch cream, desiree, kipfler, pink fur, purple congo and sweet pots as well as Queensland blue, jap and butternut pumpkins, red and brown onions and pepper berries sourced from Tasmania. Many of The Spud Man’s potatoes are seasonal, so when Max can’t grow them he sources them from the ‘cooler’ states so that his customers can still go home with a bag of farm-fresh starchy goodness.

In terms of preparing them, you can try all of the old favourite recipes like potato bake, potato salad and roasted potato skins, but there are also many innovative ways of preparing the humble spud. Try rosemary straw potatoes with lemon salt, potato gnocchi, sweet potato pie, a potato, leek and fetta tart or potato, celeriac and truffle oil soup.
