Waffle lads The Iron Ladies pop up at Rabbit Hole
Declaring a polite war against the more mainstream waffles of Belgium, The Iron Ladies serves traditional and contemporary Norwegian waffles. A pop-up party of two, The Iron Ladies is the spare-time creation of Christian Aas and Rhys Jones.
Having lived in Norway for two years, Rhys wanted to bring the dreamy toppings of traditional Norwegian waffles to Brisbane, with Christian, being originally from Norway, the perfect conspirer to execute this journey. Christian’s mum has pitched in with tips on the best way to mix in the butter and how to get the waffles to brown just so, giving The Iron Ladies waffles an authentic touch.
Traditional toppings include the Queen Sonja of sour cream and raspberry jam and the King Harald of Norwegian brown goats cheese and raspberry jam. But the boys’ creative streak also comes into play, with last week’s special the Speedy Gonzales joining The Iron Ladies hall of fame, sporting toppings of mince, salsa, sour cream and corn chips. The whole Agnes Street community likes to get involved with flavour pairings and appropriately quirky names to dub new creations, with the stall open to both sweet and savoury offerings.
Normally you can find the lads at The Rabbit Hole Ideation Cafe on Friday mornings – and at events and festivals – but next week will see the waffle stall in place from 1:00 pm, making its doughy lovehearts for Design College Australia’s end-of-year hurrah in the laneway between the college and Rabbit Hole. Then The Iron Ladies will be on a little break, back on Friday January 25 for the launch of the new workspaces at Rabbit Hole.
