The Grocer: Shichimi Togarashi

Popular Japanese tableside condiment shichimi togarashi is a blend of seven spices used to enhance the flavour of grilled meat, noodles, rice and soup.

Originally sold by apothecaries in the 17th century after chillies were introduced to Japan as a form of medicine, shichimi togarashi is a spicy and savoury blend of coarsely ground chillies and varying ingredients, depending on the particular region, manufacturer and cook. The exact ingredients and ratios change from blend to blend, but the seven-spice powder is typically built on a foundation of chillies, white or black sesame seeds, dried orange peel, ginger, Sichuan peppercorns and seaweed.

Because it’s built on many different flavours, shichimi togarashi easily transitions from a simple topping for rice to a marinade for grilled meat. You can sprinkle this versatile condiment over many of your favourite meals or use it when cooking noodles, grilled meat, potato fries or roasted vegetables.
