The Grocer: Lemon Curd

For the sweet of tooth, lemon curd is a delicious ally to keep in your pantry. A curious creation of both sweet and tart flavours, the conserve can be used to adorn just about anything.

Emerging from the popular tradition of high tea in England, lemon curd was first employed as a replacement for jam, served with cream and scones. While it does not store as well as its berry cousin, lemon curd remains an important part of the dessert world and is still widely in use to smear on cakes, bread and muffins, and as a filling in pastry.

The curd is created from melting together a generous serving of lemon peel, lemon juice, eggs, butter and plenty of sugar. Store it in an airtight container in the fridge until you are ready to share amongst sugar-loving friends for afternoon tea.
