One of the best butchers in the world, Italian Dario Cecchini comes from a lineage of eight generations of butchers – the role passed down from father to son. A contemporary butcher, Dario has moved away from the methods his father and grandfather employed, envisioning an ethical and sustainable future for the meat industry. Opening up his practice to include a restaurant, Dario now shares his methods via meals as well. Trying to reshape the way people eat and appreciate food, Dario inspires others to take meat seriously, proving that eating well means enjoying food from your land with the people around you.
