One of the best things about Christmas in the summer time is that it is finally stone fruit season. Rich in vitamins A, C and E, as well as dietary fibre, potassium and antioxidants, these vibrant fruits pack a potent nutritional punch. There are so many ways to use these delicious little morsels. Fresh frozen Lychees provide an energy boost for the kids by the pool (sticky fingers immediately resolved), and nothing beats peaches and nectarines caramalised on a tart with a dollop of fresh whipped cream. Come silly season, a crafted selection of stone fruits are the classic Australian accompaniment to the Christmas table.
