With produce sourced from its own generous gardens and local producers, the ever-changing menu features starters such as Coominya quail with fermented sweetcorn, shiso and popcorn, smoked Rocky Point cobia with watermelon, sour cream and black lime and Marburg emu tartare with mustard, yolk and fermented potatoes crisps. Moving onto mains, guests can sink their teeth into the likes of Darling Downs wagyu tri-tip with a marble score of 9 plus with onion soubise, potato and an IPA glaze, Pilton Valley confit pork with sweet potatoes, radicchio, macadamia and fermented chilli and Coral Coast barramundi with fermented Scenic Rim mushrooms, succulents and citrus. Finalise the feasting festivities with decadent delights like dark chocolate mousse with organic banana and miso ice cream, Ghost Gully figs cheesecake and charred pineapple with mountain pepper, lemon myrtle and smoked coconut sorbet.
