Scientists have spent decades searching for evidence of the American mythical beast the Sasquatch, but it seems like they should have been searching in Brisbane’s north this whole time. Sasquatch Bar opened to the public this week, enticing those with a Bigfoot-sized hunger to come sink their teeth into a smorgasbord of chargrilled meats while quaffing down pints of frosty craft beer.

A short stroll along Gympie Road from the Westfield Chermside complex sits one of Brisbane’s newest suburban watering holes – Sasquatch Bar. The family owned and operated business opens today, Thursday January 12, and is inviting all comers to emerge from the wilderness into the charmingly rustic interior. With a design influenced by travels through the Canadian Rockies, Sasquatch Bar’s sophisticated approach to hospitality is setting a new standard for neighbourhood establishments. The space has been completely overhauled from its previous restaurant incarnation, boasting warm wooden tones, a smart new bar, plenty of indoor and outdoor seating and eye-catching light fixtures. The menu has been shaped by a spectrum of influences, from Japanese yakitori (an specialty yakitori grill has been imported from Japan) and American barbecue to comforting Canadian cuisine and more – with the menu’s overarching focus being delicious meat.

Diners can select from an all-day menu that offers a range of snacks, sides and heroes (also known as hoagies or subs), which is then supplemented with a dinner offering of four to five larger dishes intended for sharing. Sasquatch’s kitchen revels in the attention to the smaller details, evidenced in uniquely moreish morsels such as the bags of homemade kettle crisps with special seasoning, waffle fries with maple aioli, grilled corn with barbecue butter and hot buttered nuts. The heroes menu stuffs freshly baked bread with fillings like fried chicken, grilled barramundi, roast mushroom with haloumi and truffle mayo, knackwurst, pork belly and lamb breast, while the sizeable dinner offerings include lamb shoulders and whole chickens. Vegans and gluten-free eaters are catered for amply – with the majority of dishes available to cater for dietary requirements. As if this wasn’t enough, Sasquatch Bar opens early to serve a collection of jaffles as well as Cleanskin Coffee Co.‘s Saint Espresso. Craft beer is a focus of the bar, with a range of tap beers rotating on a weekly basis, while international and mainstream beers are available in tallies.
