It’s white, it’s bulbous, it has strange green stems with frilly dill-like fronds. It’s fennel, a wonderful vegetable with a sweet, anise or liquorice flavour that’s at its peak when it’s raw but much more mellow when it’s cooked.

Many fennel recipes summon just the white bulb, baked or eaten raw, cored and sliced. When thinly sliced, the fennel bulb or leaves are flavoursome in salads, not overpowering in flavour and crunchy with a subtly sweet aroma.
