Manly’s business centre will soon boast a chic, nautical themed bar of its own when Sailor and Walrus opens in early October.

Vanessa Freebairn and Mike Hine are the minds behind the hip new tapas destination, Sailor and Walrus. Inspired by Vanessa’s travels through Spain where she fell in love with the small neighbourhood bars that were common throughout the country, Vanessa decided that Manly could do with something similar. Seizing the opportunity to take over a vacant space on Cambridge Parade, Vanessa and Mike have overhauled the interior with some sleek, nautical-themed decoration including authentic navigation charts, boat propellers fixed to the walls and modular furniture, as well as a brand new 15-metre stainless steel bar and galley-style kitchen.

The food offering at Sailor and Walrus consists of tapas-style cuisine, with a range of gourmet goods available for nibbling. Patrons can sample Yasa caviar made from Siberian sturgeon, Mount Zero olives, banderillas, marinated artichoke hearts and crusty bread served with cultured butter. Also available is a range of artisanal cheeses and cured meats, Jamon varieties and Spanish preserves. For some dessert snacking, sweet tooths can enjoy locally handmade rocky road, Gundowring ice cream and Turkish delight. The bar boasts an extensive wine list with more than 60 varieties available, including Laurent-Perrier champagne. Thirsty punters can also indulge in tap pours of custom Sailor and Walrus lager and cider, with a range of bottled international beers and cocktails also available.
